
Mushroom and Spinach Quiche
This delicious mushroom and spinach quiche is perfect for breakfast, brunch, or a light dinner.
Ingredients
- Salt and pepper (to taste)
- Cheddar cheese (1 cup, shredded)
- Milk (1 cup)
- Eggs (4)
- Garlic (2 cloves, minced)
- Onion (1 small, diced)
- Spinach (2 cups, chopped)
- Mushrooms (8 ounces, sliced)
- Pie crust (1, store-bought or homemade)
Instructions
- Preheat the oven to 375°F.
- Place the pie crust in a 9-inch pie dish and set aside.
- In a skillet, heat some oil over medium heat.
- Add the diced onion and minced garlic, and cook until the onion is translucent.
- Add the sliced mushrooms and cook until they release their moisture and start to brown.
- Add the chopped spinach and cook until wilted.
- In a bowl, whisk together the eggs, milk, salt, and pepper.
- Spread the mushroom and spinach mixture evenly over the pie crust.
- Pour the egg mixture over the vegetables.
- Sprinkle the shredded cheddar cheese on top.
- Bake for 35-40 minutes, or until the quiche is set and golden brown.
- Allow the quiche to cool for a few minutes before slicing and serving.
