Mushroom and Spinach Quiche

Instructions
- Preheat the oven to 375°F (190°C). Position a rack in the middle of the oven.
- Unroll the pie crust and place it in a 9-inch pie dish, pressing it into the bottom and up the sides.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat.
- Add the diced onion and minced garlic to the skillet and sauté until the onion becomes translucent, about 5 minutes.
- Stir in the sliced mushrooms and cook until they release their moisture and start to brown, about 10 minutes.
- Add the chopped spinach to the skillet and sauté until it wilts, about 3-5 minutes. Season the mixture with salt and pepper, then remove the skillet from heat.
- In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Spread the mushroom and spinach mixture evenly over the bottom of the pie crust.
- Pour the egg mixture over the vegetables, ensuring it seeps into the gaps.
- Sprinkle the shredded cheddar cheese evenly on top.
- Bake the quiche in the preheated oven for 35-40 minutes, or until the top is golden brown and a knife inserted in the center comes out clean.
- Remove the quiche from the oven and let it cool for at least 10 minutes before slicing and serving. This allows the custard to set and makes slicing easier.
