Instructions
- Prepare sterilized jars by placing them in a boiling water bath for 10 minutes. Set aside to cool.
- In a large pot, combine the diced nectarines, blueberries, sugar, and freshly squeezed lemon juice. Stir well to combine all ingredients.
- Cook the mixture over medium heat, stirring occasionally, until the fruit begins to break down and release its juices, about 15 minutes.
- Once the mixture is bubbling, stir in the pectin and continue to cook for another 20-30 minutes, stirring frequently. The jam is ready when it thickens to your desired consistency. To test, place a small spoonful on a cold plate; if it holds its shape after cooling, it’s done.
- Remove the pot from heat and let the jam cool for a few minutes before carefully transferring it into the sterilized jars. Seal them tightly.
- Allow the jam to cool completely at room temperature before storing it in the refrigerator. For longer shelf life, process the jars in a water bath canner for 10 minutes.
