Ingredients
- New York strip steak
- 2 (1-inch thick)
- Olive oil
- 2 tablespoons
- Salt
- 1 teaspoon, or to taste
- Black pepper
- 1/2 teaspoon, or to taste
- Butter
- 2 tablespoons
- Fresh thyme
- 4-5 sprigs
- Garlic
- 4 cloves, crushed
Instructions
- Remove the New York strip steaks from the refrigerator and allow them to come to room temperature for about 30 minutes. This helps in achieving an even cook.
- Preheat your oven to 400°F (200°C).
- Generously season both sides of the steaks with salt and freshly cracked black pepper.
- In a large, oven-safe skillet, heat the olive oil over high heat until just smoking.
- Carefully add the seasoned steaks to the skillet and sear for 2-3 minutes on each side until a deep brown crust forms.
- Once both sides are browned, add the crushed garlic, butter, and fresh thyme to the skillet. Use a spoon to baste the steaks with the melted butter and oil for added flavor.
- Transfer the skillet to the preheated oven and roast for 6-8 minutes for medium-rare, or until your preferred doneness is reached. Use a meat thermometer for accuracy: 130°F (54°C) for medium-rare, 140°F (60°C) for medium.
- Remove the skillet from the oven and carefully transfer the steaks to a cutting board. Let them rest for 5 minutes to allow the juices to redistribute.
- Slice against the grain and serve with the pan juices drizzled on top.
Tips
- For added flavor, consider marinating the steaks in a mixture of olive oil, garlic, and thyme for a few hours before cooking.
- Pair your steak with a side of garlic mashed potatoes or a fresh arugula salad for a complete meal.
- Leftover steak can be sliced thin for use in sandwiches or salads.
