Servings: 2

Ingredients

  • New York strip steak (2 (1-inch thick))
  • Olive oil (2 tablespoons)
  • Salt (1 teaspoon, or to taste)
  • Black pepper (1/2 teaspoon, or to taste)
  • Butter (2 tablespoons)
  • Fresh thyme (4-5 sprigs)
  • Garlic (4 cloves, crushed)

Instructions

  1. Remove the New York strip steaks from the refrigerator and allow them to come to room temperature for about 30 minutes. This helps in achieving an even cook.
  2. Preheat your oven to 400°F (200°C).
  3. Generously season both sides of the steaks with salt and freshly cracked black pepper.
  4. In a large, oven-safe skillet, heat the olive oil over high heat until just smoking.
  5. Carefully add the seasoned steaks to the skillet and sear for 2-3 minutes on each side until a deep brown crust forms.
  6. Once both sides are browned, add the crushed garlic, butter, and fresh thyme to the skillet. Use a spoon to baste the steaks with the melted butter and oil for added flavor.
  7. Transfer the skillet to the preheated oven and roast for 6-8 minutes for medium-rare, or until your preferred doneness is reached. Use a meat thermometer for accuracy: 130°F (54°C) for medium-rare, 140°F (60°C) for medium.
  8. Remove the skillet from the oven and carefully transfer the steaks to a cutting board. Let them rest for 5 minutes to allow the juices to redistribute.
  9. Slice against the grain and serve with the pan juices drizzled on top.
