Instructions
- Remove the ribeye steaks from the refrigerator and let them sit at room temperature for 30 minutes. This step ensures even cooking.
- In a small bowl, mix together the salt, black pepper, garlic powder, and dried thyme until well combined.
- Generously rub the seasoning mixture all over the steaks, ensuring an even coating.
- Heat the olive oil in a large skillet over high heat until shimmering but not smoking.
- Add the seasoned steaks to the skillet and sear for 3-4 minutes on each side for medium-rare, or until your desired doneness is reached. Use a meat thermometer for precision: 130°F (54°C) for medium-rare, 140°F (60°C) for medium.
- Reduce the heat to medium and add the butter, crushed garlic, and fresh thyme to the skillet. Cook for an additional 1-2 minutes, basting the steaks with the melted butter and garlic mixture for enhanced flavor.
- Once cooked to your liking, remove the steaks from the skillet and let them rest on a cutting board for at least 5 minutes. This allows the juices to redistribute throughout the meat.
- Slice against the grain and serve with the garlic herb butter drizzled on top.
Tips
- For a twist, add a splash of red wine to the pan after removing the steaks to deglaze it, and reduce the sauce to serve alongside.
- Pair with roasted asparagus or a fresh arugula salad for a balanced meal.
