Onion Rava Dosa

Indulge in the sheer delight of Onion Rava Dosa, a crispy, scrumptious, and delicate pancake from the Southern regions of India. Known for its unbeatable crunch and a unique blend of flavors, this pancake made from semolina and rice flour is a culinary masterpiece. The caramelized onions and the playful hint of green chilies, embedded within the thin pancake, create an exciting flavor palette. It's a perfect choice for breakfast or a light meal that brings the South Indian streets into your kitchen!

Serves 4-6

Ingredients

Oil
2 tablespoons, plus extra for greasing the pan
Water
3 cups
Salt
1 teaspoon or to taste
Black pepper
1/2 teaspoon
Cumin seeds
1 teaspoon
Green chilies
2, finely chopped
Onion
1 large, finely chopped
Rice flour
1 cup
Semolina
1 cup

Instructions

  1. In a large bowl, combine the semolina and rice flour.
  2. Add the finely chopped onion, green chilies, cumin seeds, black pepper, and salt to the bowl and mix well.
  3. Gradually pour in the water, stirring continuously, to create a smooth, thin batter. Let the batter rest for 15 minutes.
  4. Heat a non-stick pan over medium heat and lightly brush it with oil.
  5. Pour a ladleful of batter onto the hot pan, quickly spreading it with the back of the ladle in a circular motion to form a thin pancake.
  6. Drizzle a little oil around the edges of the dosa and let it cook until the bottom turns golden and crispy, about 2-3 minutes.
  7. Carefully flip the dosa using a spatula and cook the other side until it's golden and crispy.
  8. Transfer the cooked dosa to a serving plate and repeat the process with the remaining batter.
  9. Serve the Onion Rava Dosa hot, accompanied by coconut chutney or sambar for a complete, authentic South Indian experience.

Tips

  • 💡 The batter should be thin and of pouring consistency for the dosa to be crispy. Moreover, the pan should be hot when you pour the batter, and the flame should be medium when you spread the batter.
