  • Red onion (1 medium, thinly sliced)
  • Fennel bulb (1 large, thinly sliced)
  • Oranges (3 large, peeled and thinly sliced)

Instructions

  1. Start by preparing your oranges. Using a sharp knife, cut off the top and bottom of the fruit. Then, standing it upright, slice down the sides to remove the skin and pith. Cut the oranges into thin slices and set them aside.
  2. Next, prepare your fennel. Trim the top stalks and bottom base of the bulb, then cut it in half lengthwise. Remove the core, then slice the fennel as thinly as possible.
  3. Place the sliced oranges, fennel, red onion, and chopped mint leaves into a large serving bowl.
  4. In a separate small bowl, create the dressing. Whisk together the extra virgin olive oil, freshly squeezed lemon juice, honey, salt, and freshly ground black pepper until well combined.
  5. Drizzle the dressing over the salad, then gently toss the ingredients together until they're well coated.
