Vegetable oil
2 tablespoons
Chicken breast
1 pound, cut into bite-sized pieces

2 cloves, minced

Broccoli florets
2 cups
Bell peppers
1 cup, sliced (any color)
Green onions
3, sliced (for garnish)
Orange juice
1/2 cup, freshly squeezed
Honey
2 tablespoons
Soy sauce
1/4 cup
Cornstarch
1 tablespoon
Orange zest
1 teaspoon

Instructions

  1. In a small bowl, whisk together the orange juice, soy sauce, honey, and cornstarch until smooth. Set aside to allow the cornstarch to dissolve.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat until shimmering.
  3. Add the chicken pieces to the skillet, seasoning with salt and pepper. Cook for about 5-6 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the minced garlic and ginger. Stir-fry for about 1 minute, until fragrant.
  5. Add the broccoli florets and bell pepper slices to the skillet. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.
  6. Return the cooked chicken to the skillet. Pour in the orange sauce mixture and stir well to combine. Cook for an additional 2-3 minutes, allowing the sauce to thicken and coat the chicken and vegetables.
  7. Stir in the orange zest and the sliced green onions. Adjust seasoning with additional salt and pepper if needed.
