
Pancit Lomi
Pancit Lomi is a Filipino noodle dish made with thick egg noodles, meat, and vegetables in a flavorful broth.
Ingredients
- Salt and pepper (to taste)
- Green onions (2 stalks, chopped)
- Egg (1, beaten)
- Cornstarch (2 tablespoons, dissolved in water)
- Chicken broth (4 cups)
- Oyster sauce (2 tablespoons)
- Soy sauce (2 tablespoons)
- Cabbage (1/2 small head, shredded)
- Carrots (2 medium, julienned)
- Onion (1 medium, chopped)
- Garlic (4 cloves, minced)
- Shrimp (250 grams, peeled and deveined)
- Chicken breast (250 grams, sliced)
- Pork belly (250 grams, sliced)
- Lomi noodles (500 grams)
Instructions
- In a large pot, heat some oil and sauté the garlic and onion until fragrant.
- Add the pork belly and chicken breast. Cook until browned.
- Add the shrimp and cook until pink and cooked through.
- Pour in the soy sauce and oyster sauce. Stir well to coat the meat and shrimp.
- Add the carrots and cabbage. Cook for a few minutes until slightly softened.
- Pour in the chicken broth and bring to a boil.
- Add the lomi noodles and cook according to package instructions.
- Once the noodles are cooked, thicken the broth by slowly pouring in the dissolved cornstarch while stirring continuously.
- Drizzle in the beaten egg while stirring gently to create egg ribbons.
- Season with salt and pepper to taste.
- Garnish with chopped green onions.
- Serve hot and enjoy!
