Instructions
- In a shallow dish, mix together the breadcrumbs, grated parmesan cheese, chopped parsley, garlic powder, salt, and pepper until well combined.
- Cut the salmon fillets into chunks and place them in a food processor. Pulse until the salmon is finely chopped but not pureed.
- Transfer the chopped salmon to a large mixing bowl. Add the beaten egg and mix well until the ingredients are incorporated.
- Divide the salmon mixture into 4 equal portions and shape each portion into patties, about 1 inch thick.
- Coat each salmon patty in the breadcrumb mixture, pressing gently to ensure the coating adheres well.
- Heat the olive oil in a large skillet over medium heat. Once hot, add the salmon patties to the skillet, cooking for 4-5 minutes per side or until they are golden brown and cooked through.
- While the patties are cooking, toast the burger buns in a toaster or on a grill until lightly browned.
- To assemble the burgers, spread a tablespoon of mayonnaise on the bottom half of each toasted bun.
- Place a salmon patty on top of the mayonnaise, then layer with lettuce, tomato slices, and red onion.
- Cover with the top half of the bun and serve the burgers immediately for the best flavor and texture.
Tips
- For an extra kick, add some Dijon mustard to the mayonnaise for a zesty spread.
- Feel free to substitute the salmon with other types of fish, such as tuna or even crab for a different flavor profile.
- For a gluten-free option, use gluten-free breadcrumbs and buns.
