Ingredients

Original recipe serves 4

Salmon fillets
1 pound, skinless
Egg
1, beaten
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon
Garlic powder
1 teaspoon
Fresh parsley
2 tablespoons, finely chopped
Parmesan cheese
1/2 cup, grated
Breadcrumbs
1 cup, preferably panko for extra crunch
Olive oil
2 tablespoons
Burger buns
4, toasted
Mayonnaise
1/4 cup
Lettuce
4 leaves, washed and dried
Tomato
1, sliced
Red onion
1/2, thinly sliced

Instructions

  1. In a shallow dish, mix together the breadcrumbs, grated parmesan cheese, chopped parsley, garlic powder, salt, and pepper until well combined.
  2. Cut the salmon fillets into chunks and place them in a food processor. Pulse until the salmon is finely chopped but not pureed.
  3. Transfer the chopped salmon to a large mixing bowl. Add the beaten egg and mix well until the ingredients are incorporated.
  4. Divide the salmon mixture into 4 equal portions and shape each portion into patties, about 1 inch thick.
  5. Coat each salmon patty in the breadcrumb mixture, pressing gently to ensure the coating adheres well.
  6. Heat the olive oil in a large skillet over medium heat. Once hot, add the salmon patties to the skillet, cooking for 4-5 minutes per side or until they are golden brown and cooked through.
  7. While the patties are cooking, toast the burger buns in a toaster or on a grill until lightly browned.
  8. To assemble the burgers, spread a tablespoon of mayonnaise on the bottom half of each toasted bun.
  9. Place a salmon patty on top of the mayonnaise, then layer with lettuce, tomato slices, and red onion.
  10. Cover with the top half of the bun and serve the burgers immediately for the best flavor and texture.
