Ingredients
- 1 pound, skinless Salmon fillets
- 1/2 cup, preferably whole wheat Breadcrumbs
- 2, finely chopped Green onions
- 2 tablespoons, fresh, chopped Dill
- 1 teaspoon Lemon zest
- 1 teaspoon Garlic powder
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
- 2 tablespoons, for cooking Olive oil
- 1/4 cup Mayonnaise
- 4 leaves, romaine or butter lettuce Lettuce
- 1, sliced Tomato
- 1/2, thinly sliced Red onion
- 4, whole grain or brioche Burger buns

Instructions
- In a food processor, pulse the salmon fillets until coarsely chopped, being careful not to over-process.
- Transfer the chopped salmon to a mixing bowl. Add the breadcrumbs, chopped green onions, dill, lemon zest, garlic powder, salt, and pepper. Mix gently until just combined.
- Divide the mixture into 4 equal portions and shape each portion into a patty about 1 inch thick.
- Heat the olive oil in a skillet over medium heat. Once hot, add the salmon patties and cook for about 4-5 minutes on each side, or until golden brown and cooked through.
- While the patties are cooking, you can toast the burger buns in a toaster or on a skillet until lightly golden.
- Spread mayonnaise on the bottom half of each bun. Top with a salmon patty, followed by a leaf of lettuce, a slice of tomato, and several rings of red onion. Place the top half of the bun on each burger.
