Ingredients

Salmon fillets
1 pound, skinless
Breadcrumbs
1/2 cup, preferably whole wheat
Green onions
2, finely chopped
Dill
2 tablespoons, fresh, chopped
Lemon zest
1 teaspoon
Garlic powder
1 teaspoon
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon
Olive oil
2 tablespoons, for cooking
Mayonnaise
1/4 cup
Lettuce
4 leaves, romaine or butter lettuce
Tomato
1, sliced
Red onion
1/2, thinly sliced
Burger buns
4, whole grain or brioche

Instructions

  1. In a food processor, pulse the salmon fillets until coarsely chopped, being careful not to over-process.
  2. Transfer the chopped salmon to a mixing bowl. Add the breadcrumbs, chopped green onions, dill, lemon zest, garlic powder, salt, and pepper. Mix gently until just combined.
  3. Divide the mixture into 4 equal portions and shape each portion into a patty about 1 inch thick.
  4. Heat the olive oil in a skillet over medium heat. Once hot, add the salmon patties and cook for about 4-5 minutes on each side, or until golden brown and cooked through.
  5. While the patties are cooking, you can toast the burger buns in a toaster or on a skillet until lightly golden.
  6. Spread mayonnaise on the bottom half of each bun. Top with a salmon patty, followed by a leaf of lettuce, a slice of tomato, and several rings of red onion. Place the top half of the bun on each burger.
  7. Serve the salmon burgers immediately with your favorite sides, such as sweet potato fries or a fresh salad.
