- Breadcrumbs (1/2 cup, preferably whole wheat)
- Green onions (2, finely chopped)
- Dill (2 tablespoons, fresh, chopped)
- Lemon zest (1 teaspoon)
- Garlic powder (1 teaspoon)
- Salt (1/2 teaspoon)
- Black pepper (1/4 teaspoon)
- Olive oil (2 tablespoons, for cooking)
- Mayonnaise (1/4 cup)
- Lettuce (4 leaves, romaine or butter lettuce)
- Tomato (1, sliced)
- Red onion (1/2, thinly sliced)
- Burger buns (4, whole grain or brioche)
Instructions
- In a food processor, pulse the salmon fillets until coarsely chopped, being careful not to over-process.
- Transfer the chopped salmon to a mixing bowl. Add the breadcrumbs, chopped green onions, dill, lemon zest, garlic powder, salt, and pepper. Mix gently until just combined.
- Divide the mixture into 4 equal portions and shape each portion into a patty about 1 inch thick.
