2-3 pounds, boneless and skinless
Olive oil
2 tablespoons
Salt

Black pepper

Dried thyme

Breadcrumbs
1 cup, preferably whole wheat or seasoned
Parmesan cheese
1 cup, grated
Fresh parsley
