Ingredients

  • Salt and pepper (to taste)
  • Fresh parsley (2 tablespoons, chopped)
  • Parmesan cheese (1/4 cup, grated)
  • Garlic (4 cloves, minced)
  • Olive oil (2 tablespoons)
  • Spaghetti squash (1 medium)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle the cut sides of the squash with olive oil and sprinkle with salt and pepper.
  4. Place the squash halves cut side down on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for 30-40 minutes, or until the squash is tender and easily pierced with a fork.
  6. While the squash is roasting, heat the remaining olive oil in a small skillet over medium heat.
  7. Add the minced garlic and cook for 1-2 minutes, until fragrant.
  8. Remove the squash from the oven and use a fork to scrape the flesh into spaghetti-like strands.
  9. Transfer the spaghetti squash strands to a large bowl and toss with the garlic, Parmesan cheese, and fresh parsley.
