Ingredients

- Fresh parsley (2 tablespoons, chopped)
- Parmesan cheese (1/4 cup, grated)

- Spaghetti squash (1 medium)
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Drizzle the cut sides of the squash with olive oil and sprinkle with salt and pepper.
- Place the squash halves cut side down on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 30-40 minutes, or until the squash is tender and easily pierced with a fork.
- While the squash is roasting, heat the remaining olive oil in a small skillet over medium heat.
- Add the minced garlic and cook for 1-2 minutes, until fragrant.
- Remove the squash from the oven and use a fork to scrape the flesh into spaghetti-like strands.
