Ingredients

Original recipe serves 4

Fresh parsley
2 tablespoons, chopped
Black pepper
1/2 teaspoon, freshly ground
Salt
1/2 teaspoon
Garlic powder
1 teaspoon
Parmesan cheese
1/2 cup, grated
Olive oil
2 tablespoons
Beets
4 medium, peeled and sliced into 1/4-inch rounds

Instructions

  1. Preheat your oven to 400°F (200°C). While waiting, line a baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine sliced beets, olive oil, garlic powder, salt, and freshly ground black pepper. Toss until the beets are fully coated with the seasoning.
  3. Lay the seasoned beets in a single layer on the prepared baking sheet. Avoid crowding them to ensure even roasting.
  4. Roast in the preheated oven for 30-35 minutes. The beets should become tender and slightly caramelized at the edges.
  5. Remove the baking sheet from the oven and evenly sprinkle the grated Parmesan cheese over the roasted beets.
  6. Return the baking sheet to the oven and roast for an additional 5 minutes. This allows the cheese to melt and turn golden brown, adding a beautiful crust to the beets.
  7. Take the beets out of the oven and let them cool slightly. Garnish with freshly chopped parsley before serving. This dish is best served warm.

Tips

  • 💡 Choose beets that are firm and heavy for their size for the best flavor.
  • 💡 Feel free to experiment with different types of hard cheeses.
