Instructions
- Peel, pit, and dice the peaches. Set aside 2 cups for pureeing and the rest for adding to the ice cream mixture.
- In a blender or food processor, puree the 2 cups of diced peaches until smooth.
- In a large mixing bowl, combine the pureed peaches, remaining diced peaches, sugar, heavy cream, whole milk, vanilla extract, and freshly squeezed lemon juice. Stir well to ensure all the sugar is dissolved, and the mixture is well combined.
- Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. This usually takes about 20-25 minutes.
- Once the ice cream reaches a soft-serve consistency, transfer it to a lidded container. Fold in the remaining diced peaches for added texture and peach flavor.
- Freeze the ice cream for at least 4 hours or until firm. Overnight freezing is recommended for the best texture.
- Serve the peach ice cream in bowls or cones. Enjoy this sweet treat as a delightful ending to a summer barbecue or a refreshing snack on a hot day.
Tips
- For a variation, you can replace half of the peaches with ripe mangoes for a peach-mango twist.
- Make sure to use ripe, juicy peaches for the best flavor. If peaches are not in season, you can use frozen peaches, just thaw them before use.
- For a vegan version, replace whole milk and heavy cream with full-fat coconut milk.
