Ingredients

Pork shoulder
800 grams, thinly sliced
Pineapple
1 medium, half for marinade and half for garnish
Onion
1 large, half for marinade and half for garnish
Garlic cloves

Achiote paste
50 grams
Cumin
1 teaspoon
Oregano
1 teaspoon
Cayenne pepper
1/2 teaspoon
Salt
to taste
Black pepper
to taste
Corn tortillas

1/2 cup, chopped
Lime wedges

Instructions

  1. In a blender, combine half the pineapple, half the onion, garlic, achiote paste, cumin, oregano, cayenne pepper, salt, and pepper. Blend until smooth to create the marinade.
  2. In a large bowl, add the sliced pork. Pour the marinade over the pork, ensuring each piece is well coated. Cover and refrigerate for at least 2 hours. For best results, marinate overnight which allows the flavors to seep into the pork.
  3. Preheat the grill to medium-high heat. Remove the pork from the refrigerator and discard any excess marinade.
  4. Grill the pork slices for about 4-5 minutes per side, or until they are nicely charred and cooked through. Let the pork rest for a few minutes after removing from the grill.
  5. While the pork is resting, warm the corn tortillas on the grill or in a skillet over medium heat until they are pliable and slightly toasted.
  6. Slice the grilled pork into smaller pieces. Assemble the tacos by placing the pork on the warm tortillas.
  7. Top each taco with chopped cilantro, diced pineapple and onion. Serve with lime wedges on the side.
