Vegetable oil

Onion
1 large, finely chopped
Garlic
4 cloves, minced

Green chili
1, slit lengthwise (adjust to taste)
Turmeric powder

Cumin powder
1 teaspoon
Coriander powder
1 teaspoon
Red chili powder
1 teaspoon (adjust to taste)
Salt

Tomatoes
2 medium, chopped
Potatoes
4 medium, peeled and cubed
Garam masala
1 teaspoon
Fresh cilantro

Instructions

  1. In a large pan, heat the vegetable oil over medium heat.
  2. Add the chopped onion and sauté until golden brown, about 5-7 minutes.
  3. Stir in the minced garlic, grated ginger, and slit green chili. Sauté for another minute until fragrant.
  4. Sprinkle in the turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Stir well to combine the spices with the onion mixture.
  5. Add the chopped tomatoes and cook for 3-5 minutes, until they soften and break down.
  6. Introduce the cubed potatoes to the pan, mixing well to coat them with the spice mixture.
  7. Cover the pan and cook for about 15-20 minutes, stirring occasionally, until the potatoes are tender and cooked through.
  8. Once cooked, sprinkle garam masala over the curry and mix gently to incorporate.
