4, boneless and skinless
Ricotta cheese
1 cup
Fresh spinach
2 cups, chopped
Garlic
3 cloves, minced
Olive oil
2 tablespoons
Parmesan cheese
1/2 cup, grated
Salt
1 teaspoon
Black pepper
1/2 teaspoon

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the ricotta cheese, chopped spinach, minced garlic, salt, and black pepper. Mix until well blended and set aside.
  3. Carefully cut a pocket into each chicken breast, ensuring you don't cut all the way through.
  4. Stuff each chicken breast with the ricotta and spinach mixture, packing it in gently.
  5. In a large oven-safe skillet, heat the olive oil over medium heat. Once hot, add the stuffed chicken breasts, cooking until golden brown on both sides, approximately 5 minutes per side.
  6. Immediately sprinkle the grated Parmesan cheese over the chicken breasts.
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F) and the cheese is melted and bubbly.
  8. Remove from the oven and let rest for a few minutes before serving.
