Ingredients

Olive oil
2 tablespoons
Salt
to taste
Black pepper

Garlic
3 cloves, minced
Parmesan cheese
1 cup, grated
Fresh spinach
2 cups, cooked and chopped
Chicken breasts
4, boneless and skinless

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Butterfly the chicken breasts by cutting horizontally through the center, but not all the way through, creating a pocket.
  3. Season the inside of the chicken breasts generously with salt and pepper.
  4. In a mixing bowl, combine the cooked and chopped spinach, grated Parmesan cheese, minced garlic, and a pinch of salt and pepper. Mix until well combined.
  5. Divide the spinach mixture evenly among the chicken breasts, spreading it over one side of each breast.
  6. Fold the other side of each chicken breast over the spinach mixture to enclose it, securing the filling inside.
  7. Heat olive oil in an oven-safe skillet over medium-high heat. Once hot, add the stuffed chicken breasts to the skillet.
  8. Cook the chicken for about 3-4 minutes on each side, or until they are nicely browned.
  9. Carefully transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  10. Remove the skillet from the oven and let the chicken rest for a few minutes before serving. This allows the juices to redistribute within the chicken.
  11. Slice the stuffed chicken breasts and serve with your favorite side dishes, such as roasted vegetables or a fresh salad.
