Ingredients

  • Butter (1 tablespoon)
  • Black pepper (to taste)
  • Salt (to taste)
  • Chives (2 tablespoons, chopped)
  • Cream cheese (4 tablespoons)
  • Smoked salmon (100g, thinly sliced)
  • Eggs (4)

Instructions

  1. In a bowl, whisk the eggs until well beaten. Season with salt and black pepper.
  2. Heat the butter in a non-stick skillet over medium heat.
  3. Pour the beaten eggs into the skillet and cook for 2-3 minutes, or until the edges start to set.
  4. Place the smoked salmon slices on one half of the omelette.
  5. Drop spoonfuls of cream cheese on top of the smoked salmon.
  6. Sprinkle chopped chives over the cream cheese.
  7. Fold the other half of the omelette over the filling.
  8. Cook for another 2-3 minutes, or until the omelette is cooked through and the cheese is melted.
  9. Slide the omelette onto a plate and serve hot.
