Spicy Korean Tofu Wraps

Ingredients
- 14 ounces, pressed and sliced Extra firm tofu
- 3 tablespoons Soy sauce
- 2 tablespoons Sesame oil
- 2 tablespoons Gochujang (Korean chili paste)
- 2 cloves, minced Garlic
- 1 tablespoon, grated Fresh ginger
- 1 tablespoon Rice vinegar
- 1 teaspoon Sugar
- 4 large Tortilla wraps
- 1 cup, washed and dried Lettuce leaves
- 1 cup, julienned Cucumber
- 1 cup, julienned Carrots
- 1/4 cup, sliced Green onions
- 2 tablespoons (for garnish) Toasted sesame seeds

Instructions
- In a bowl, whisk together the soy sauce, sesame oil, gochujang, minced garlic, grated ginger, rice vinegar, and sugar until well combined to create the marinade.
- Place the sliced tofu in the marinade, ensuring all pieces are well coated. Allow the tofu to marinate for at least 10 minutes, or up to 30 minutes for a more intense flavor.
- Heat a non-stick pan over medium heat. Add the marinated tofu slices and cook for 3-4 minutes on each side, or until golden brown and crispy. Remove the tofu from the pan and set aside.
- Take a tortilla wrap and lay it flat on a clean surface. Start by placing a layer of lettuce leaves in the center, followed by the marinated tofu, julienned carrots, julienned cucumber, and sliced green onions.
- Sprinkle toasted sesame seeds on top for added flavor and crunch.
- Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top to form a wrap.
- Repeat with the remaining tortilla wraps and ingredients until all are used.
- Serve the spicy Korean tofu wraps immediately, with extra gochujang sauce on the side for dipping if desired.
