Ingredients

Original recipe serves 4

Extra firm tofu
14 ounces, pressed and sliced
Soy sauce
3 tablespoons
Sesame oil
2 tablespoons
Gochujang (Korean chili paste)
2 tablespoons
Garlic
2 cloves, minced
Fresh ginger
1 tablespoon, grated
Rice vinegar
1 tablespoon
Sugar
1 teaspoon
Tortilla wraps
4 large
Lettuce leaves
1 cup, washed and dried
Cucumber
1 cup, julienned
Carrots
1 cup, julienned
Green onions
1/4 cup, sliced
Toasted sesame seeds
2 tablespoons (for garnish)

Instructions

  1. In a bowl, whisk together the soy sauce, sesame oil, gochujang, minced garlic, grated ginger, rice vinegar, and sugar until well combined to create the marinade.
  2. Place the sliced tofu in the marinade, ensuring all pieces are well coated. Allow the tofu to marinate for at least 10 minutes, or up to 30 minutes for a more intense flavor.
  3. Heat a non-stick pan over medium heat. Add the marinated tofu slices and cook for 3-4 minutes on each side, or until golden brown and crispy. Remove the tofu from the pan and set aside.
  4. Take a tortilla wrap and lay it flat on a clean surface. Start by placing a layer of lettuce leaves in the center, followed by the marinated tofu, julienned carrots, julienned cucumber, and sliced green onions.
  5. Sprinkle toasted sesame seeds on top for added flavor and crunch.
  6. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top to form a wrap.
  7. Repeat with the remaining tortilla wraps and ingredients until all are used.
  8. Serve the spicy Korean tofu wraps immediately, with extra gochujang sauce on the side for dipping if desired.

Tips

  • 💡 For added protein, consider adding some cooked quinoa or chickpeas to the filling.
  • 💡 Feel free to customize the vegetables based on what you have on hand; bell peppers and radishes make great additions!
  • 💡 Serve with a side of kimchi for an authentic Korean touch.
