Ingredients
- Rice noodles
- 1 cup, cooked
- Lettuce leaves
- 8 large leaves
- Green onions
- 4, finely sliced
- Cucumber
- 1 medium, thinly sliced
- Carrots
- 2 medium, julienned
- Firm tofu
- 1 block, sliced
- Vegetable broth
- 4 cups
- Ginger
- 2 tablespoons, grated
- Garlic
- 2 cloves, minced
- Sriracha sauce
- 1 tablespoon
- Soy sauce
- 2 tablespoons
- Miso paste
- 3 tablespoons
Instructions
- In a bowl, combine the miso paste, soy sauce, sriracha sauce, minced garlic, and grated ginger. Stir until well mixed.
- Pour the vegetable broth into a medium pot and bring to a simmer over medium heat.
- Add the tofu slices to the simmering broth and let them cook for 5 minutes. Afterwards, remove the tofu slices and set them aside.
- Stir the miso mixture into the simmering broth. Allow it to simmer for another 5 minutes to let the flavors meld together.
- To assemble the wraps, lay out a lettuce leaf and fill it with a spoonful of cooked rice noodles, a few slices of cucumber, a handful of julienned carrots, some green onions, and a few slices of the cooked tofu.
- Drizzle the miso soup mixture over the contents of the lettuce wrap for added flavor.
- Fold in the sides of the lettuce leaf and roll it up tightly. Repeat with the remaining lettuce leaves and fillings.
- Serve the Spicy Miso Soup Lettuce Wraps immediately. Enjoy them as a refreshing appetizer or a light yet fulfilling main course.
