
Spicy Miso Soup Wraps
These spicy miso soup wraps are a delicious and healthy twist on traditional miso soup. Packed with flavor and nutrients, they make a satisfying and easy-to-make meal.
Ingredients
- Rice noodles (4 ounces, cooked)
- Lettuce leaves (8)
- Green onions (2, thinly sliced)
- Cucumber (1, julienned)
- Carrots (1, julienned)
- Firm tofu (8 ounces, sliced)
- Vegetable broth (2 cups)
- Ginger (1 teaspoon, grated)
- Garlic (2 cloves, minced)
- Sriracha sauce (1 teaspoon)
- Soy sauce (1 tablespoon)
- Miso paste (2 tablespoons)
Instructions
- In a small bowl, whisk together the miso paste, soy sauce, sriracha sauce, minced garlic, and grated ginger.
- In a medium pot, bring the vegetable broth to a simmer. Add the tofu slices and cook for 5 minutes.
- Remove the tofu from the pot and set aside.
- Add the miso mixture to the pot and stir well to combine. Simmer for 5 minutes.
- To assemble the wraps, place a lettuce leaf on a clean surface. Top with a spoonful of cooked rice noodles, julienned carrots, cucumber slices, green onions, and a few slices of tofu.
- Drizzle some of the miso soup mixture over the fillings.
- Fold the sides of the lettuce leaf over the fillings, then roll it up tightly.
- Repeat with the remaining lettuce leaves and fillings.
- Serve the spicy miso soup wraps as a delicious and healthy appetizer or light meal.
