Ingredients

Original recipe serves 4

Rice noodles
1 cup, cooked
Lettuce leaves
8 large leaves
Green onions
4, finely sliced
Cucumber
1 medium, thinly sliced
Carrots
2 medium, julienned
Firm tofu
1 block, sliced
Vegetable broth
4 cups
Ginger
2 tablespoons, grated
Garlic
2 cloves, minced
Sriracha sauce
1 tablespoon
Soy sauce
2 tablespoons
Miso paste
3 tablespoons

Instructions

  1. In a bowl, combine the miso paste, soy sauce, sriracha sauce, minced garlic, and grated ginger. Stir until well mixed.
  2. Pour the vegetable broth into a medium pot and bring to a simmer over medium heat.
  3. Add the tofu slices to the simmering broth and let them cook for 5 minutes. Afterwards, remove the tofu slices and set them aside.
  4. Stir the miso mixture into the simmering broth. Allow it to simmer for another 5 minutes to let the flavors meld together.
  5. To assemble the wraps, lay out a lettuce leaf and fill it with a spoonful of cooked rice noodles, a few slices of cucumber, a handful of julienned carrots, some green onions, and a few slices of the cooked tofu.
  6. Drizzle the miso soup mixture over the contents of the lettuce wrap for added flavor.
  7. Fold in the sides of the lettuce leaf and roll it up tightly. Repeat with the remaining lettuce leaves and fillings.
  8. Serve the Spicy Miso Soup Lettuce Wraps immediately. Enjoy them as a refreshing appetizer or a light yet fulfilling main course.
