- Firm tofu (1 block, sliced)
- Vegetable broth (4 cups)
- Ginger (2 tablespoons, grated)
- Garlic (2 cloves, minced)
- Sriracha sauce (1 tablespoon)
- Soy sauce (2 tablespoons)
- Miso paste (3 tablespoons)
Instructions
- In a bowl, combine the miso paste, soy sauce, sriracha sauce, minced garlic, and grated ginger. Stir until well mixed.
- Pour the vegetable broth into a medium pot and bring to a simmer over medium heat.
- Add the tofu slices to the simmering broth and let them cook for 5 minutes. Afterwards, remove the tofu slices and set them aside.
- Stir the miso mixture into the simmering broth. Allow it to simmer for another 5 minutes to let the flavors meld together.
- To assemble the wraps, lay out a lettuce leaf and fill it with a spoonful of cooked rice noodles, a few slices of cucumber, a handful of julienned carrots, some green onions, and a few slices of the cooked tofu.

- Fold in the sides of the lettuce leaf and roll it up tightly. Repeat with the remaining lettuce leaves and fillings.
