Ingredients

Cooked rice
4 cups (for serving)
Green onions
1/4 cup, chopped (for garnish)
Salt
1/4 teaspoon
Pepper
1/4 teaspoon
Red pepper flakes
1 teaspoon (adjust to taste)
Honey
2 tablespoons
Sriracha sauce
2 tablespoons
Soy sauce
3 tablespoons
Onion
1 medium, sliced
Bell peppers
2 (one red, one yellow), sliced
Fresh ginger
1 tablespoon, grated
Garlic
3 cloves, minced
Vegetable oil
2 tablespoons
Shrimp
1 pound, peeled and deveined

Instructions

  1. In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.
  2. Add the minced garlic and grated ginger, stirring for about 1 minute until fragrant.
  3. Add the sliced bell peppers and onion, stir-frying for 2-3 minutes until they are slightly softened but still crisp.
  4. Push the vegetables to one side of the skillet. Add the shrimp to the other side, cooking for 2-3 minutes per side until they turn pink and are cooked through.
  5. In a small bowl, whisk together the soy sauce, sriracha sauce, honey, red pepper flakes, salt, and pepper until well combined.
  6. Pour the sauce over the shrimp and vegetables, tossing everything to coat evenly.
  7. Cook for an additional 1-2 minutes until the sauce thickens slightly and coats the shrimp and vegetables.
  8. Remove from heat and garnish with chopped green onions.
  9. Serve the spicy shrimp stir fry over a bed of cooked rice and enjoy!
