  • Fresh spinach (4 cups, chopped)
  • Feta cheese (1 cup, crumbled)
  • Lemon juice (1 tablespoon)
  • Dried oregano (1 teaspoon)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Butterfly the chicken breasts by cutting a slit horizontally through the center, being careful not to cut all the way through.
  3. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and allow to cool slightly.
