Instructions
- Preheat the oven to 375°F (190°C).
- Butterfly the chicken breasts by cutting a slit horizontally through the center, being careful not to cut all the way through.
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and allow to cool slightly.

- Open the butterflied chicken breasts and season both sides with salt and pepper.
