Instructions
- In a medium bowl, whisk together olive oil, minced garlic, lime juice, chili powder, cumin, salt, and pepper to create the marinade.
- Add the shrimp to the bowl and toss well to ensure they are evenly coated. Allow them to marinate for 10 minutes for optimal flavor.
- Preheat a grill or grill pan over medium-high heat, ensuring it's hot enough to create a nice char on the shrimp.
- Grill the shrimp for 2-3 minutes on each side, or until they are cooked through and display slight char marks.
- Remove the shrimp from the grill and let them cool slightly while you warm the corn tortillas on the grill or in a dry skillet for about 30 seconds per side.
