Instructions
- In a large mixing bowl, combine the yogurt, lemon juice, ginger paste, garlic paste, tandoori masala, paprika, turmeric, cumin powder, coriander powder, salt, and 2 tablespoons of vegetable oil. Stir well to create a smooth and fragrant marinade.
- Add the pork tenderloin pieces to the marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or ideally overnight for maximum flavor absorption.
- Preheat your oven to 400°F (200°C).
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Thread the marinated pork pieces onto the skewers, leaving a little space between each piece for even cooking. Place the skewers on a baking sheet lined with aluminum foil for easier cleanup.
- Brush the pork skewers generously with additional vegetable oil to enhance browning and flavor.
- Bake in the preheated oven for 25-30 minutes, turning halfway through, until the pork is cooked through (internal temperature should reach 145°F or 63°C) and has developed a slight char.
- Once cooked, remove the skewers from the oven and allow them to rest for a few minutes.
- Garnish with freshly chopped cilantro and serve hot with lemon wedges on the side.
Tips
- For a spicier kick, add a teaspoon of cayenne pepper to the marinade.
- Serve with naan or basmati rice to complement the flavors, along with a side of cucumber raita for a cooling effect.
