Ingredients

Pork tenderloin
1 pound, trimmed and cut into bite-sized pieces
Plain yogurt
1 cup
Lemon juice
2 tablespoons
Ginger paste
1 tablespoon
Garlic paste
1 tablespoon
Tandoori masala
2 tablespoons
Paprika
1 teaspoon
Turmeric
1 teaspoon
Cumin powder
1 teaspoon
Coriander powder
1 teaspoon
Salt
1 teaspoon
Vegetable oil
2 tablespoons, plus more for brushing
Fresh cilantro
1/4 cup, chopped for garnish
Lemon wedges
for serving

Instructions

  1. In a large mixing bowl, combine the yogurt, lemon juice, ginger paste, garlic paste, tandoori masala, paprika, turmeric, cumin powder, coriander powder, salt, and 2 tablespoons of vegetable oil. Stir well to create a smooth and fragrant marinade.
  2. Add the pork tenderloin pieces to the marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or ideally overnight for maximum flavor absorption.
  3. Preheat your oven to 400°F (200°C).
  4. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  5. Thread the marinated pork pieces onto the skewers, leaving a little space between each piece for even cooking. Place the skewers on a baking sheet lined with aluminum foil for easier cleanup.
  6. Brush the pork skewers generously with additional vegetable oil to enhance browning and flavor.
  7. Bake in the preheated oven for 25-30 minutes, turning halfway through, until the pork is cooked through (internal temperature should reach 145°F or 63°C) and has developed a slight char.
  8. Once cooked, remove the skewers from the oven and allow them to rest for a few minutes.
