
Tarascadas
Tarascadas are a traditional Mexican dish made with grilled meat, onions, and peppers, served on a warm tortilla.
Ingredients
- Salsa (1/4 cup)
- Sour cream (1/4 cup)
- Cilantro (1/4 cup, chopped)
- Tortillas (8)
- Salt and pepper (to taste)
- Chili powder (1 teaspoon)
- Cumin (1 teaspoon)
- Lime juice (2 tablespoons)
- Garlic (3 cloves, minced)
- Bell peppers (2, sliced)
- Onion (1 large, sliced)
- Skirt steak (1 pound)
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, combine the lime juice, cumin, chili powder, minced garlic, salt, and pepper.
- Place the skirt steak in a shallow dish and pour the marinade over it. Let it marinate for 10 minutes.
- Grill the steak for about 4-5 minutes per side, or until it reaches your desired level of doneness. Remove from the grill and let it rest for a few minutes.
- While the steak is resting, grill the sliced onions and bell peppers until they are slightly charred and tender.
- Slice the steak against the grain into thin strips.
- Warm the tortillas on the grill or in a skillet.
- To assemble the tarascadas, place a few slices of steak on a tortilla, top with grilled onions and peppers, and garnish with chopped cilantro.
- Serve with sour cream and salsa on the side.
