Salsa
1 cup, homemade or store-bought
Sour cream
1/2 cup
Cilantro
1/4 cup, finely chopped
Tortillas
8, warmed
Salt and pepper
to taste
Chili powder
1 tablespoon
Cumin
1 teaspoon
Lime juice
2 tablespoons
Garlic
2 cloves, minced
Bell peppers
2, thinly sliced
Onion
1 large, thinly sliced
Skirt steak
1 pound

Instructions

  1. Preheat the grill to medium-high heat.
  2. While the grill is heating, prepare your marinade. In a bowl, combine the lime juice, cumin, chili powder, minced garlic, salt, and pepper. Stir until well combined.
  3. Place the skirt steak in a shallow dish and pour the marinade over it, ensuring it's evenly coated. Let it marinate for at least 10 minutes to absorb the flavors.
  4. Grill the steak for about 4-5 minutes per side, or until it reaches your desired level of doneness. Remove from the grill and let it rest for a few minutes to retain its juices.
  5. While the steak is resting, grill the sliced onions and bell peppers until they are slightly charred and tender. This should take about 3-4 minutes per side.
  6. Slice the rested steak against the grain into thin strips. This ensures tender bites.
  7. Warm the tortillas on the grill or in a skillet. This makes them pliable and enhances their flavor.
  8. To assemble the tarascadas, place a few slices of steak on a warm tortilla, top with grilled onions and peppers, and garnish with chopped cilantro. For a tangy kick, add a dollop of sour cream and a spoonful of salsa.
