Instructions
- Preheat the grill to medium-high heat.
- While the grill is heating, prepare your marinade. In a bowl, combine the lime juice, cumin, chili powder, minced garlic, salt, and pepper. Stir until well combined.
- Place the skirt steak in a shallow dish and pour the marinade over it, ensuring it's evenly coated. Let it marinate for at least 10 minutes to absorb the flavors.
- Grill the steak for about 4-5 minutes per side, or until it reaches your desired level of doneness. Remove from the grill and let it rest for a few minutes to retain its juices.
- While the steak is resting, grill the sliced onions and bell peppers until they are slightly charred and tender. This should take about 3-4 minutes per side.
- Slice the rested steak against the grain into thin strips. This ensures tender bites.
- Warm the tortillas on the grill or in a skillet. This makes them pliable and enhances their flavor.
- To assemble the tarascadas, place a few slices of steak on a warm tortilla, top with grilled onions and peppers, and garnish with chopped cilantro. For a tangy kick, add a dollop of sour cream and a spoonful of salsa.
- Serve immediately while warm and enjoy the authentic Mexican flavors!
