Tarte aux Figues

- 1 Egg, beaten
- 1 cup Almond flour
- 1/2 cup Powdered sugar
- 1/2 cup Unsalted butter, softened
- 1 Egg
- 1 teaspoon Vanilla extract
- 10-12 Fresh figs, sliced
- 1/4 cup Honey
- 1/4 cup Sliced almonds

Instructions
- In a food processor, combine the all-purpose flour, cold cubed butter, granulated sugar, and salt. Pulse until the mixture resembles coarse crumbs.
- Add the beaten egg to the food processor and pulse until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat the oven to 375°F (190°C) and lightly grease a 9-inch tart pan.
- On a lightly floured surface, roll out the chilled dough into a circle large enough to fit the tart pan. Press the dough into the pan, trim any excess, and prick the bottom with a fork to prevent puffing.
- In a separate bowl, combine the almond flour, powdered sugar, softened butter, egg, and vanilla extract. Mix until well combined to create the almond cream.
- Spread the almond cream evenly over the tart crust.
- Arrange the sliced figs on top of the almond cream, gently pressing them into the cream.
- Drizzle the honey over the figs and sprinkle with the sliced almonds.
- Bake the tart for 35-40 minutes, or until the crust is golden and the almond cream is set.
- Allow the tart to cool before serving, ideally at room temperature. This will allow the flavors to fully develop.
Tips
- For a more pronounced almond flavor, you can add a few drops of almond extract to the cream.
- This tart is best served the day it's made, but it can be stored in an airtight container at room temperature for up to 2 days.
