Shrimp
1 pound, peeled and deveined
Vegetable oil
2 tablespoons
Garlic
3 cloves, minced
Ginger
1 tablespoon, grated
Soy sauce
1/4 cup
Honey
2 tablespoons
Teriyaki sauce
1/4 cup
Carrots
2 medium, sliced
Broccoli florets
2 cups
Bell peppers
1 cup, sliced (any color)
Cooked rice
4 cups, for serving
Green onions
2, sliced (for garnish)
Sesame seeds
2 tablespoons, toasted (for garnish)

Instructions

  1. In a small bowl, whisk together the teriyaki sauce, soy sauce, honey, minced garlic, and grated ginger to create a luscious sauce mixture. Set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat until shimmering.
  3. Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes per side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add the sliced bell peppers, broccoli florets, and sliced carrots. Stir fry for 4-5 minutes, or until the vegetables are crisp-tender yet vibrant in color.
  5. Return the cooked shrimp to the skillet with the vegetables and pour the teriyaki sauce mixture over everything. Stir well to coat all ingredients evenly.
  6. Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly and beautifully coat the shrimp and vegetables.
  7. Remove from heat and garnish with sliced green onions and toasted sesame seeds.
  8. Serve the teriyaki shrimp stir fry over a bed of warm cooked rice, and enjoy the delightful medley of flavors!

Tips

  • 💡 For added heat, consider adding a pinch of red pepper flakes or a dash of sriracha to the sauce mixture.
  • 💡 Feel free to substitute shrimp with chicken or tofu for a different protein option.
  • 💡 You can also mix in other vegetables like snap peas or zucchini for more variety.
