Thyme and Lemon Grilled Chicken

Ingredients

  • Black pepper (1/2 teaspoon)
  • Salt (1 teaspoon)
  • Olive oil (2 tablespoons)
  • Garlic (3 cloves, minced)
  • Lemon (1, juiced and zested)
  • Fresh thyme (2 tablespoons, chopped)
  • Chicken breasts (4 boneless, skinless)

Instructions

  1. In a small bowl, combine the chopped thyme, lemon juice, lemon zest, minced garlic, olive oil, salt, and black pepper.
  2. Place the chicken breasts in a shallow dish and pour the marinade over them. Make sure the chicken is well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade and discard the excess marinade.
  5. Grill the chicken for about 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.
