Instructions
- In a medium bowl, whisk together the chopped thyme, lemon juice, lemon zest, minced garlic, olive oil, salt, and black pepper until well combined.
- Place the chicken breasts in a shallow dish or a resealable plastic bag and pour the marinade over them. Ensure each piece is thoroughly coated.
- Cover the dish or seal the bag, then refrigerate for at least 1 hour, or for best results, overnight. This allows the flavors to penetrate the chicken deeply.
- When ready to grill, preheat your grill to medium-high heat.
- Remove the chicken from the marinade and discard any excess marinade to prevent flare-ups on the grill.
- Grill the chicken for about 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is fully cooked.
- Once cooked, remove the chicken from the grill and let it rest for 5 minutes to allow the juices to redistribute.
- Serve the thyme and lemon grilled chicken warm with seasonal vegetables, a fresh salad, or your favorite grain for a complete meal.
Tips
- For an extra kick, add a teaspoon of red pepper flakes to the marinade.
- You can substitute chicken breasts with thighs for a richer flavor.
- Try adding a splash of white wine to the marinade for added depth.
