Servings: 4

Ingredients

Fresh thyme
1/4 cup, chopped
Lemon juice
1/4 cup, freshly squeezed
Lemon zest
1 tablespoon
Garlic
3 cloves, minced
Olive oil
1/4 cup
Salt
1 teaspoon
Black pepper
1/2 teaspoon
Chicken breasts
4 (6-ounce) pieces, boneless and skinless

Instructions

  1. In a medium bowl, whisk together the chopped thyme, lemon juice, lemon zest, minced garlic, olive oil, salt, and black pepper until well combined.
  2. Place the chicken breasts in a shallow dish or a resealable plastic bag and pour the marinade over them. Ensure each piece is thoroughly coated.
  3. Cover the dish or seal the bag, then refrigerate for at least 1 hour, or for best results, overnight. This allows the flavors to penetrate the chicken deeply.
  4. When ready to grill, preheat your grill to medium-high heat.
  5. Remove the chicken from the marinade and discard any excess marinade to prevent flare-ups on the grill.
  6. Grill the chicken for about 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is fully cooked.
  7. Once cooked, remove the chicken from the grill and let it rest for 5 minutes to allow the juices to redistribute.
  8. Serve the thyme and lemon grilled chicken warm with seasonal vegetables, a fresh salad, or your favorite grain for a complete meal.
