Ingredients

Shrimp
1 pound, peeled and deveined
Lime juice
2 tablespoons, freshly squeezed
Garlic powder
1 teaspoon
Cumin
1 teaspoon
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon
Vegetable oil
1/4 cup (for cooking and toasting)
Corn tortillas
8 small
Refried beans
1 cup
Lettuce
2 cups, shredded
Tomato
1 cup, diced
Avocado
1, sliced
Cilantro
1/4 cup, chopped
Salsa
1 cup
Additional lime wedges
for serving

Instructions

  1. In a medium bowl, combine the shrimp, lime juice, garlic powder, cumin, salt, and black pepper. Mix well, ensuring the shrimp is evenly coated. Let marinate for 10 minutes to absorb all the flavors.
  2. While the shrimp is marinating, prepare your salsa. If using homemade salsa, combine diced tomatoes, chopped cilantro, lime juice, and salt to taste in a bowl. Mix and set aside.
  3. Heat the vegetable oil in a large skillet over medium heat. Once hot, add the marinated shrimp. Cook for 2-3 minutes per side, or until the shrimp turn pink and opaque. Remove from the skillet and set aside.
  4. In the same skillet, place the corn tortillas one at a time. Toast them for about 1 minute on each side, or until they are crispy and lightly golden.
  5. To assemble the tostadas, spread a generous layer of refried beans onto each crispy tortilla.
  6. Top with shredded lettuce, diced tomato, sliced avocado, and the cooked shrimp. Finish with a sprinkle of fresh cilantro and a spoonful of salsa on top.
