- 8 small
- Refried beans
- 1 cup
- Lettuce
- 2 cups, shredded
- Tomato
- 1 cup, diced
- Avocado
- 1, sliced
- Cilantro
- 1/4 cup, chopped
- Salsa
- 1 cup
- Additional lime wedges
- for serving
Instructions
- In a medium bowl, combine the shrimp, lime juice, garlic powder, cumin, salt, and black pepper. Mix well, ensuring the shrimp is evenly coated. Let marinate for 10 minutes to absorb all the flavors.
- While the shrimp is marinating, prepare your salsa. If using homemade salsa, combine diced tomatoes, chopped cilantro, lime juice, and salt to taste in a bowl. Mix and set aside.
- Heat the vegetable oil in a large skillet over medium heat. Once hot, add the marinated shrimp. Cook for 2-3 minutes per side, or until the shrimp turn pink and opaque. Remove from the skillet and set aside.
- In the same skillet, place the corn tortillas one at a time. Toast them for about 1 minute on each side, or until they are crispy and lightly golden.
- To assemble the tostadas, spread a generous layer of refried beans onto each crispy tortilla.
