Ingredients

Original recipe serves 2

Udon noodles
8 ounces
Bacon
4 slices, chopped
Heavy cream
1/2 cup
Egg yolks
3
Parmesan cheese
1/2 cup, grated
Garlic
2 cloves, minced
Green onions
2, sliced
Salt
to taste
Black pepper
to taste

Instructions

  1. Cook the udon noodles according to package instructions. Drain and set aside, reserving a bit of the cooking water.
  2. In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon from the skillet and set aside on a paper towel-lined plate, leaving the rendered fat in the skillet.
  3. In a small bowl, whisk together the egg yolks, grated Parmesan cheese, minced garlic, and heavy cream until well combined.
  4. Reduce the heat to low and add the cooked udon noodles to the skillet with the bacon fat. Toss to coat the noodles in the fat, ensuring they are warmed through.
  5. Quickly pour the egg yolk mixture over the noodles, tossing constantly to coat the noodles evenly. The residual heat will gently cook the eggs, creating a creamy sauce. If the sauce is too thick, add a splash of the reserved cooking water to achieve the desired consistency.
  6. Season with salt and freshly cracked black pepper to taste.
  7. Divide the Udon Carbonara into serving bowls and top with the crispy bacon and sliced green onions.
  8. Serve immediately and enjoy the delightful fusion of flavors.

Tips

  • 💡 For a lighter version, you can substitute turkey bacon for a healthier option.
  • 💡 Feel free to add vegetables like spinach or peas for extra nutrition and color.
  • 💡 If you prefer a stronger flavor, try adding a splash of soy sauce or a sprinkle of crushed red pepper flakes for heat.
