Nori seaweed
2 sheets, cut into thin strips
Toasted sesame seeds
2 tablespoons
Green onions
2, thinly sliced
Sugar
1 tablespoon
Mirin
3 tablespoons
Soy sauce
3 tablespoons
Soba sauce
1/2 cup
Udon noodles
2 servings

Instructions

  1. Cook the udon noodles according to the package instructions. Once cooked, rinse under cold water to stop the cooking process, drain well, and set aside.
  2. In a small bowl, combine the soba sauce, soy sauce, mirin, and sugar, whisking until the sugar completely dissolves.
  3. Pour the sauce mixture into a small saucepan and warm it over low heat until it's heated through. Be sure not to let it boil.
  4. Divide the cooked and drained udon noodles into two bowls evenly.
  5. Pour the warmed soba sauce over the noodles, ensuring that they are well-coated.
