Zucchini
2 cups, grated

Breadcrumbs

Egg

Black pepper
1/2 teaspoon
Vegetable oil

Marinara sauce

Instructions

  1. Begin by placing the grated zucchini in a colander and sprinkling it with 1 teaspoon of salt. Allow it to sit for 10 minutes to draw out excess moisture.
  2. After 10 minutes, use your hands to squeeze the zucchini firmly, removing as much liquid as possible. This step is crucial for achieving crispy croquettes.
  3. In a large mixing bowl, combine the drained zucchini, minced garlic, grated Parmesan cheese, 1 cup of breadcrumbs, beaten egg, and black pepper. Mix until all ingredients are well incorporated.
