Zucchini and Garlic Meatballs

- 1 pound Ground beef
- 1 medium, grated Zucchini
- 3 cloves, minced Garlic
- 1/2 cup Breadcrumbs
- 1/2 cup, grated Parmesan cheese
- 1, beaten Egg
- 1/4 cup, chopped Fresh parsley
- 2 tablespoons Olive oil
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 2 cups Marinara sauce

Instructions
- In a large mixing bowl, combine the ground beef, grated zucchini, minced garlic, breadcrumbs, grated Parmesan cheese, beaten egg, chopped parsley, salt, and black pepper. Use your hands to mix until all ingredients are well incorporated.
- Shape the mixture into meatballs, about 1 inch in diameter.
- In a large skillet, heat the olive oil over medium heat. Once hot, add the meatballs to the skillet in batches to avoid overcrowding.
- Cook the meatballs for about 8-10 minutes, turning occasionally, until they are browned on all sides.
- Once browned, remove the meatballs from the skillet and set them aside on a plate.
- In the same skillet, pour in the marinara sauce and bring it to a gentle simmer.
- Return the meatballs to the skillet, cover, and simmer for an additional 10-15 minutes, or until the meatballs are cooked through and the flavors meld together.
