Chicken breasts
4, boneless and skinless
Zucchini
1 medium, grated
Garlic
3 cloves, minced
Parmesan cheese
1/2 cup, grated
Breadcrumbs
1/2 cup, preferably whole wheat
Olive oil
2 tablespoons, divided
Salt
to taste
Black pepper
to taste
Fresh parsley
2 tablespoons, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the grated zucchini, minced garlic, Parmesan cheese, breadcrumbs, 1 tablespoon of olive oil, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  3. Using a sharp knife, carefully create a pocket in each chicken breast by slicing it horizontally, ensuring not to cut all the way through.
  4. Stuff each chicken breast generously with the zucchini and garlic mixture, pressing it in firmly to secure the filling.
  5. Season the outside of the stuffed chicken breasts with salt and pepper for added flavor.
  6. Heat a large skillet over medium-high heat and add the remaining tablespoon of olive oil.
  7. Place the stuffed chicken breasts in the skillet and sear for 3-4 minutes on each side until they are golden brown.
  8. Transfer the chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the stuffing is hot and bubbly.
  9. For added flavor and texture, you can broil the chicken for the last 2-3 minutes to achieve a crispy top.
  10. Once done, let the chicken rest for a few minutes before serving. Garnish with fresh parsley if desired.
