Ingredients

  • Black pepper (1/4 teaspoon)
  • Salt (1/2 teaspoon)
  • Honey (1 tablespoon)
  • Lime juice (2 tablespoons)
  • Fresh cilantro (1/4 cup, chopped)
  • Jalapeno (1, seeded and finely chopped)
  • Red bell pepper (1/2 cup, finely chopped)
  • Red onion (1/2 cup, finely chopped)
  • Ripe peaches (4, diced)

Instructions

  1. In a medium bowl, combine the diced peaches, red onion, red bell pepper, jalapeno, and cilantro.
  2. In a small bowl, whisk together the lime juice, honey, salt, and black pepper.
  3. Pour the dressing over the peach mixture and toss to combine.
